📝 Two-Week Meal Plan of Our Favs
01/10/23 - Wednesday
Hey friends!
It’s the 2nd week of our NSC (No-Spend Challenge) and to celebrate we’ve got a 2-week meal plan to share with you 🥳
Because we think all good things should be doubled ✌🏻
We know many of you (ourselves included) are NOT spending money this month on sit-down restaurants or take-out.
So to help you succeed in this challenge, we’ve got 2 weeks worth of dinner recipes below, straight from our show episode yesterday (Ep 370 1st Annual Dinner Awards)
Meal Plan
🌶️ Chili Mondays 🌶️
Jen’s pick: Butternut Squash Chipotle Chili
Jill’s pick: Turkey Chili (because Turkey is often less expensive than beef 😎)
🥙 No Cook Tuesdays (‘cuz we’re tired!) 🥙
Jen’s pick: Caprese chicken salad. Simply combine cooked chicken, jar of pesto, mini mozzarella balls, spinach, and grape tomatoes. Bodabing-bodaboom.
Jill’s pick: Charcuterie! Just whatever you have in your fridge and pantry, right on your plate for dinner (cheese, crackers, thinly sliced apples, nuts, bread, dried fruit - You get the point 😉)
🥘 One Pot Wednesdays 🥘
Jen’s pick: Buffalo Chicken and Rice
Jill’s pick: Creamy Pesto Chicken Pasta
🍲 Thirsty Thursdays (Soup Edition!) 🍲
Jen’s pick: Tortellini Soup
Jill’s pick: Tortilla Soup
❄️ Freezer Fridays ❄️
Jen’s pick: Chicken nuggets and sweet potato fries
Jill’s pick: Plantains and burrito (or enchiladas or taquitos). I like Goya’s frozen maduros and am always happy with a generic taquito or burrito from Aldi’s. Throw in some fresh avocado and it will look like you really tried!
♨ Sheet Pan Saturdays ♨
Jen’s pick: Sheet Pan Pizza
Jill’s pick: Sheet Pan Chicken Fajitas
🥣 Pantry Sundays (using pantry staples) 🥣
Jen’s pick: Spanish Rice and Beans
Jill’s pick: Fried Rice (using a bag of frozen veggies)
📝 Life Plan 📝
While you’re doing all this future planning, we also encourage you to take a few minutes to get yourself term life insurance!
I (Jill) finally did this through Ladder a few weeks ago as 1 of my 2024 financial goals.
I chose Ladder because of their affordability and the flexibility to change my plan at any point over the next 15 years.**
